Hedgerow Gin

West Waterford is a patchwork of fields, stitched together with the blue and green thread of rivers and hedgerows. By September, the lanes and bohreens around the distillery are ripe for the plucking. The tastiest wild fruits – sloes, damsons, crab apples and blackberries – are picked by hand and soaked for months on end in our award-winning gin. Then we lightly sweeten, strain and bottle.
